Cinco de Mayo and Othe Celebrations

Mr Daybreak has had some trips, so that means I stay in Daybreak to help out. I like to find themes to base our meals on and maybe some activities.  This last weekend, we celebrated Superheros. I googled the favorite meals of superheroes and planned the menu. Spider-Man's favorite meal is Aunt B's wheatcakes, so we had pancakes one night, and watched the Tobey Maguire Spider-Man on my Clearplay DVD. Wolverine and Superman like Hamburgers, and we watched Christopher Reeves in Superman (such an awesome classic). Batman likes nachos, and some others like tacos and enchiladas (I'm not big on comics so I didn't recognize them) so Mrs Daybreak and I ate enchiladas and little man ate a stuffed quesadilla. And then Thor likes creamsicles, I found a recipe for a smoothie that said it was like creamsicles, so gave it a try. It didn't taste at all like creamsicles, but we loved them nonetheless. Here is the recipe.  You don't taste the carrots at all. Healthy and yummy. That night we watched Batmunk. You can actually watch the whole movie on Youtube. And the little man loved it.  And we watched the 1990 Teenage Mutant Ninja Turtles. Can you guess the food?  Pizza of course! So that was this weekend. Plus we did some mother's day crafts, like this one. Hopefully you can open the image larger, the lower image is the pattern you use to make the card.  Cut on the solid lines, leave the dash lines in tact, they need to stay attached to the paper or be the position of the folding. I used an exact-o knife and cut the pattern atop the construction paper...



And this one with little man and his twin sisters' hands. Tracing almost 5 month olds' hands isn't so easy. Go figure.





Last weekend, we celebrated Cinco de Mayo. One of my favorites because most Mexican is gluten free, so me friendly. The project we did that week was to make a piñata.  Anyone can buy a piñata, only the cool people make their own.  I decided the papier-mâché style was too messy. I found instructions for making one using a brown paper bag.  Here is the final product. We were going for a Mexican hat dancer with flowy skirts.  I should have taken a close up photo to show the detail on the upper part with her hair and the top of her skirts, but it took us a couple nights of work.


But I think it was worthy it.

We couldn't find the real bat, so use the Nerf one. It wasn't really tough enough. His mom took a good swing to start the breaking of the bag. And then he was able to break it apart.  I filled it with bubbles, silly putty, some gumballs, a couple miniature candy bars, and some sidewalk chalk.

Chipotle Chicken Sweet Potato Skins
Shrimp With Avocado-Mango Salsa (I used quinoa instead of couscous though)
Chili-Rubbed Skirt Steak Tacos (though we didn't make tacos, I used the steak recipe only)
Mexican Haystacks (I used the steak meat for these, and the rice I used is the next recipe)
Green Rice (remember, using brown rice doubles the cook time, and I always have to add more liquid too.  The chile relleno is great too, just wasn't on the menu this Cinco de Mayo.)
